Pasta alla Norma

This is an example of Italian cooking at its finest. Using simple but fresh and tasty ingredients including eggplant, tomatoes, garlic, and basil to create a delicious pasta dish is a perfect example of the joy of Sicilian cuisine, and it’s finished off with creamy, salted ricotta. 

Arancini

This delightful dish can be found in variations across Sicily, often sold in street food stalls for a couple of euros. They are a ball of ricotta rice which is filled with anything from meat, fish, or cheese, and then deep-fried. Super simple but super tasty and comforting. 

Caponata

Eggplants are big in Sicily, and this dish is one of the best ways to enjoy them. There are many different versions, but the eggplant is usually fried with tomatoes and onion, with raisins, pine nuts, and vinegar being added later. 

Cannoli

These sweet treats are popular all over the world these days but originated on this small island. Deep-fried pastry tubes are filled with ricotta which can be left plain or flavored, with lemon and pistachio being traditional choices.

Wicklow Mountains, County Wicklow

This iconic mountain range spreads across several counties and includes the Dublin mountains. The Wicklow Way was Ireland’s first waymarked trail and spans 129km meaning there are so many places to enjoy some amazing hiking with some wonderful views out to the sea and across to Dublin.
